There's more to it than just yards.
Harrington had over half the rushing attempts on a team that only had 158 passing attempts on the season. Kupp had 114 receptions out of a total of 281 on a team that another reciever (Bourne) caught 73 passes, and that also ran the ball 326 times.
In comparing the conferences...after doing some research...you could be right when it comes to defense. But the overall level of competition especially considering schedule strength is noticeable.

Harrington also did very little against the top-2 defenses he played against (McNeese & Baylor).
Kupp averaged 170 ypg against the top-4 defenses he faced (Oregon, UNI, Montana, Portland State).
He had 116 yds against us...
