Coast Guard versus merchant Marine Academy at Fenway Park
I watched it about 10 minutes of that game and was pleasantly surprised at how good the quality was
Or maybe I should say the quality exceeded my expectations coming in

Come to mind first. It will take time to establish and enhance FCS rivalry games considering the recent losses to FBS.
I enjoyed the 1980’s Governor’s Cup between EWU and Idaho. The governors of each state would wager a basket of Idaho potatoes vs. Washington State apples.
